My suggestion is: click on every plane and look up the stability and number of guns, and you have a pretty good idea of how good the plane/team is.

In reality (and in the game too) an Se5a was better than a Fokker DrI, even if less maneuverable. The same for Fokker DVII, not maneuverable as DrI, but anyway far better.
You seem to agree with me! You are saying that the planes with good stability and two guns (SE5a and Fokker DVII) are the better than the planes with less stability or just one gun!
Let me re-phrase it: When I say "a plane with lots of manouvres" or "with good manoeuvres" I'm talking about a runner which has at least the 23L/R manouvres. A Fokker Dr.I, on the other hand, has very few manouvres (!) so, in my opinion, it is not very manoeuvrable (the other players are more likely to guess where you will end up, 'specially if you stall).
Hence, SE5a and Fokker DVII are very good planes (in my opinion)...
On the other hand, IN GAME TERMS, probably a plane like the SE5a but with stability C would still be better than a plane with the same manoeuvres as the Fokker Dr.I, but with Stability A!!! (that is, having lots of manoeuvres is better than having a good stability).
