In principle, a plane with good manoeuvres but bad stability or one gun ought to be MUCH better than a plane with very few manouevres but good stability and two guns. 
However, in practice, those planes with good stability and more guns ALSO have the better manoeuvres!!! 
My suggestion is: click on every plane and look up the stability and number of guns, and you have a pretty good idea of good the plane/team is. 
This said, beware of snipes, DIII's, DIV's, and bristols-one of these can easily beat from two to four weaker planes single-handedly
