I do like your idea of pilots going MIA if their plane get shot down (my old gaming group used similar ideas for our campaign games.)
I agree with regulating the map size. The 17 x 12 map is suicide for a lot of the planes (particularly for the Fokkers.) However a large map might be appropriate for some of the late war combats (say Spad XIII vs Pfalz D XII)
