Generally what you are seeing is that some people simply play more than others. If you want a fast match - state that in the description:
FAST GAME - 3 moves per day or more
ONLINE PLAYERS only
Or some such thing.
As to your other point, though some people try out the site then walk away (I think Falconfab has the record for the oldest stale game), there is a built in mechanism to prevent players from "dropping out of games they don't like" - specifically, if you have an outstanding move in a game (and are not tailing someone) - you cannot join ANY new games. Having games open for anyone to join may create its own set of problems.
But a solution is in the making - our valiant webmasters are working hard to implement an automove feature. If you have not moved for 7 days - your plane will be moved for you (generally straight). If you don't move again, then it will automove you again - and I think that automove period keeps dropping if it continues... Having this interval set when you create the game might be a neat idea - are you listening webmasters?
