Turns out GMT Games is doing "Oak & Iron" a game of ship-to-ship combat in the American Civil War. For example, Merrimac v Monitor.

Derek, except for the fact it was published five years ago, the Age of Sail game you mention must be Flying Colors and its expansions, Ship of the Line and Serpent of the Seas:

I have them all and have to confess that though I love and always will love the good old WS&IM, for boardgaming I prefer FC, as its fire tables are more realistic and its rules more elaborate (actually in constant development). You can give them a look here:
